What I Eat in a Day, Healthy Meal Ideas

I'm obsessed with watching and reading the "What I Eat in a Day" vlogs and blogs, because I'm nosy, but mostly for inspiration. I tend to stick with an array of my favorite meals and eat them non-stop so I'm always on the market for new tweaks for my current favs and new healthy recipes.

Pluuuuss since I'm currently on day two of my 30-day challenge, I thought it would be great to share a sample of what a typical day of food looks like for me. I typically eat about five small meals a day and try to keep them as nutrient-dense as possible.
Healthy Breakfast: Scrambled Egg & Egg Whites with Avocado
Breakfast | Eggs & Avo
I cannot get enough of this combo - this is my post-workout breakfast everyday without fail. I have one egg and approximately four egg whites (1/2 cup liquid egg whites) scrambled and about 30g avocado (1/4 small avocado), occasionally topped with a little freshly ground black pepper and pink himalayan sea salt. Seriously so creamy and delicious and packed with protein and healthy fats.

Healthy Summer Salad with Spinach, Chicken, Beets, Mushroom, Strawberries & Cucumber
 Lunch | A Big Salad
You know, like a salad? Only bigger? (Seriously still one of my favorite quotes from that show, ever.)
Everyday for lunch I have a huge salad. My current fav combination starts with baby greens and spinach (I buy the 50/50 lettuce mix), followed by cucumber, cremini mushrooms, raw beets, strawberries, and chicken breast. I could (and usually do) eat this every day - it's so good! I love salads because they're a great way to get a ton of different veggies into your diet. Plus, a salad this size takes me almost an hour to eat!

Healthy Snacks: Carrot and Celery Sticks with Almonds
Afternoon Snack | Veggies & Nuts
My afternoon snack is almost always raw veggies and a handful of unsalted, raw almonds or cashews. Carrots, celery, and sugar-snap peas are my go-tos. I love these kind of snacks that take you awhile to eat and this one is packed with all the nutrients of the veggies plus the healthy fats and fiber of the nuts.

Healthy Dinner: Jerk Chicken Breast with Vegetables

For dinner I always have protein, generally chicken breast or fish with lots of vegetables. I'm also obsessed with using a jerk seasoning on my chicken (and then mixing the excess into the veggies). Gives awesome spice and flavor. I know this is not the most attractive food picture you've ever seen. I'm such a firm believer in the presentation of food - we truly do eat with our eyes first. But I'm keeping it pretty real here and sometimes it just looks like that (and sometimes I use frozen veggies...)

Healthy Chocolate Protein Shake Smoothie
Evening Snack | Protein Shake
Just to increase my protein intake even further, I always end my day with a protein shake. I combine vanilla and chocolate whey protein powder and add one teaspoon of cocoa powder for extra chocolatey goodness. I also blend it with 5-6 ice cubes to make it extra thick and it almost tastes like a Wendy's frosty. Mmm!

Daily Total: 996 calories | 116g protein | 28g fat | 73g carbohydrates
(This includes the not pictured coffee with milk and vitamins - this was definitely a lighter day as I just wasn't that hungry. Typically I eat about 1,200 calories per day.)
